Inspiration to reality

One of my favorite restaurants here in Houston is called Istanbul Grill.  It, of course, as you can tell by the name is Turkish cuisine.  The food is always fresh and delicious.  it’s the kind of place where you get the perfect size meal that doesn’t leave you feeling stuffed and immobile. You leave satisfied and pleasantly full from an incredible meal with all the right combinations of  flavors. 

This was my inspiration for my meal last night.  So, I made it into reality.  I sometimes have these great ideas and then I try it and it’s not quite what I hoped for.  This time, however, I was very pleased!

Here’s what I did.  It was so simple and so delicious.  I’m so happy I have leftovers for lunch today!  I got a flank steak ($4.72!!!) and marinated it with olive oil, lemon, cumin, cinnamon, paprika, garlic, pepper, parsley.. The recipe is in the link above.  I did not use onions (thought I had one, but I was sadly mistaken) so I sprinkled in some onion powder.  And I used regular paprika not hot.  Let that sit for about 30 mins. (Longer it marinates the better I’m sure, but mine was still really tastey). We put it on the grill and cooked to perfection.

Istanbul Grill always serves this delicious cabbage salad along side there meat with a couple tomato slices as garnish.  The cabbage salad is so simple yet so good.  I got a bag of coleslaw and then added olive oil, vinegar, salt,pepper, lemon juice.  You don’t need a lot, so start with just splashes off each and do to taste.  mix it up, serve with tomato slices.

it is so good. Definitely one of my new go-to meals.

Delizioso!

I love Sam for many reasons.  One of my favorite things is him in the kitchen.  He is fearless, creative and always trying new things.  He inspires me in so many ways.  Who would think him in a kitchen would make me love him more and more.  Love is silly sometimes, but I love it.  He decided to make us a gluten free deep dish pizza (Chicago style) for dinner. We weren’t sure how it would turn out, but lets just say it’s a keeper!!!! Yummmm.  

Here is the recipe from the website. He made a few changes… For the gluten free flour he used King Arthurs and instead of xantham gum he used arrowroot powder.  We used fresh mozzarella, sausage and good pepperoni.  It was delizioso!!

I’ve been slacking…

My apologies!! It’s been almost a month.  In my defense, it has been busy with work and having some visitors and various things penciled into the schedule.  However, that’s no excuse and I do apologize.  My issue is that I have been eating the same recipes I’ve posted before, so I’m not sure what to write about.  So this blog has turned into more of a “when I find something new and delicious I will share” type of blog.  Soooo drum roll please…….

the only thing I left out was sundried tomatoes, shallot and garlic.  It was still very delicious.  

But I added some chicken to the mix.  I got chicken that was already cut into strips and I rubbed some mustard and then breaded the chicken in a mix of almond flour, arrowroot powder, salt and pepper.  Cooked them in some bacon grease on the stove and added it to the top of my “pasta”. 

It was a very fresh,yummy dinner.  Best thing about it, it only took about 15 minutes!!

There’s no place like home…

I got back from a work trip to San Antonio yesterday. I was gone from Wednesday to Saturday, so that means I ate out for three days.  Needless to say, I’m so happy to be home and have my home cooked meals.  I really enjoy being in control more of what goes on my plate and in my body. I did the best I could while we were at restaurants to order the most fresh and “paleo friendly” items on the menu, but sometimes that’s still not the greatest choice.  I could feel it in my body, I was a little sluggish and just not feeling 100%.  So, I am so happy to be home and eating my own food.

yesterday for dinner, Sam grilled steaks!! We had steamed broccoli and split a sweet potato, yummy.  Tonight for dinner, we are having these Mediterranean chicken kebabs on a salad of mixed veggies..check it out In the link above.

the rest of the week we are having pulled pork, burgers and coleslaw, and salads. 

Getting back to the basics of real, simple, delicious food.  🙂

 

 

Kitchen frenzy

Hello! So today feels like I have never left my kitchen, which is completely alright with me! I love cooking and making great food.  Today’s cooking involved making egg omelet bites (12 of them) that we will have for the week. So good! Also, chicken salad and pizza!! 

The egg omelet bites are quite simple and quite delicious.  Here is how I make mine….. 10 eggs, 4 pieces of bacon, fresh spinach, breakfast sausage, pinch of salt and pepper. In a large bowl, whisk the eggs, add chopped spinach, salt and pepper and cooked sausage..mix well. Before you fry the bacon, cut each piece into 3. Fry up the bacon but not all the way cooked. Preheat oven to 350 degrees. Using a cupcake pan, grease the holes (I use coconut oil but olive oil is ok too) then put each piece of bacon into your cupcake holes. Finally, carefully pour your egg mixture into each hole. Be sure to not fill all the way as they will rise. Cook for 20 minutes. Enjoy! You can add whatever you want… Peppers, mushrooms, onions, etc. They will last you for the week.

Chicken salad I use a pre roasted chicken from the grocery store. I then shred the chicken. I chop up 2 celery stalks and add some salt and pepper to taste. I use olive oil based mayo and mix in about 3 tbspns and mix well. I love to have it on a bed of greens and with a few Nut Thin crackers 🙂

For the pizza, Sam and I have been trying to find the right recipe for crust. Here is what we tried today and it is our favorite!! 1 cup almond flour, 1/3 cup butter (melted), 1 tspn baking powder, 4 egg whites and a pinch of salt. Mix all ingredients together well…if your mixture is too runny, add a little more almond flour to get a more “doughy” texture. Grease baking sheet, spread your mixture out and cook at 350 degrees for about 20 minutes. Until golden brown. Then top your pizza how you like it. I love fresh tomato pizza sauce, green peppers, black olives, sausage and topped with mozzarella. Put back in oven on broil for about 4 minutes, then cut, serve and enjoy!!!!

My fridge is filled with delicious food, I feel so accomplished and I have one happy husband 🙂

Oh cauliflower, how universal art thou….

So cauliflower… Sam picks fun at me for how I say cauliflower… Apparently I pronounce it “collyflower” and he thinks it is goofy.  How do y’all say it??!!??  Anyways… Regardless of your pronunciation, it is a useful food!  It is great raw, baked, cooked on the stovetop and in the food processor.  So versatile! I love it in salads or basically as a side dish to any meal.

I also like it baked with a light coating of olive oil and sea salt. Bake at 400 until browned a bit, not burned. Yummmmm.

Just thought I’d share these ways to spruce up the same ol’ same side dish recipe routine.

New website that I love…

Hello!  Well, as I said before, this is all a journey.  We are always learning and discovering new things along the “paleo” diet.  With these findings come awesome  websites that we stumble upon that are filled with new recipes.  My latest finding is http://www.paleocupboard.com/.  yesterday for dinner I made her Mongolian beef recipe. To find it, go to her website and click on “recipes” then “beef” and scroll down to Mongolian beef.  I promise you will LOVE this!!!   It is fairly quick and simple, very convenient!  Make enough so you have leftovers for lunch. I’m drooling just thinking of this dish… Yummmmmmm.

Spring Break :o)

I love my job as a teacher. It is incredibly rewarding and incredibly hard at times, but none the less, I love what I do. This week is spring break! So it allowed for me to be more organized with my meals. With Sam having baseball season, he won’t be home for a few dinners. So I won’t be making as many meals. When he is not home for dinner I usually just make myself whatever I have around the house (which usually results in a delicious salad!) So here is the menu for this week…

Marinated flank steak with roasted cauliflower with lemon mustard dressing.
At HEB (our grocery store for those that do not know) I found a flank steak, just under 1 lb for $4.15! Can’t beat that, it pays (no pun intended, hehe) to look around the meat section and not just grab the first one you see! I will marinate the meat in a mixture of olive oil, soy sauce, red wine vinegar, lemon juice, worcestershire, dijon mustard, garlic, pepper. (any recipe that you like will of course work just fine!)
The roasted cauliflower is one of our favorites! Instructions: preheat oven to 450. In shallow pan, toss the cauliflower (chopped up) with 2 tblspn olive oil and a little salt. Roast cauliflower until tender and lightly browned (15-20 minutes) Toast the nuts (1/3 cup walnuts, hazelnuts, almonds or pecans) in with the cauliflower for a few minutes over medium-high heat, shaking pan or stirring to avoid burning. Set aside. In large bowl, whisk together 1 tblspn lemon juice, 1 tblspn dijon mustard, 1/3 cup coconut milk (or half & half) and 1 tblspn olive oil. Add the cauliflower and nuts and toss until covered. Serve warm.
Marinated chicken and creamed kale and brusselsprouts Marinating chicken breasts in olive oil, dijon mustard, garlic salt, basil, pepper.
Creamed kale and brusselsprouts instructions: 1 bunch kale, brusselsprouts (cut in half), 3 tblspn unsalted butter, 1 cup heavy cream. Melt butter in large skillet over medium-low heat. Add kale and brusselsprouts, cover to steam it about 4-5 minutes. Stir it up to cook evenly (make sure not burning) When kale is limp and brusselsprouts lightly browned, pour heavy cream and turn up heat to medium for 2 minutes. When cream is bubbling, reduce heat so that it slightly simmers uncovered. Cook until cream has thickened and reduced by about half. Season to taste with sea salt, black pepper and nutmeg (optional). serve warm and enjoy!!
Bacon burgers with sweet potato fries!! Make burgers how you like. Fry up some bacon and saute onions to top the burger. Sweet potato fries…just cut up a sweet potato. Lightly toss in olive oil and sea salt on a cookie sheet. Bake at 425 for about 20 minutes, or until they are browned slightly. ENJOY!!!!
The rest of the days, I will be enjoying a salad or maybe some breakfast for dinner. I suppose whatever I am craving for that day is what I will have.
These recipes may seem long, but they are deceiving. They may take approximately 20 minutes tops of prep work, the rest is just waiting for it to cook, bake, etc.

A Salad Love Affair

Good moooooooorning, America!!  Ok, but on a serious note these past two days my internal alarm clock has woken me up at 5:00 am and 6:15 am (I think last nights wine allowed me to have that extra hour and fifteen…). Regardless, it gives me time to organize my weekly menu.  As you notice from the title, there is a salad obsession going on.  This most likely stems from my childhood, wherever and whenever we would as a family go out to dinner, I would 99.9% of the time order a salad. If there was a salad buffet…fuuhhgetaboutit…SOLD!!!! I guess my parents never had that dreaded parent v child vegetable stand off (You’re welcome mom and dad).   I also have a slight obsession, I like to call it part of my daily routine, with Pinterest.   I get a ton of ideas and recipes from it, my obsession is justified.  I happened to stumble across this pin with 7 salad recipes.  So I decided this week, I’m channeling my inner child love affair with salads, and ball out on delicious salads.  I’m pumped!!!!

  From the website, I’m using these recipes:  1. Power Salad. 2.  Brusselsprouts salad   3.  Mountain Mama (minus chickpeas). 4.  Spinach quinoa salad with avocado and grapefruit.  5.  Mediterranean salad (not on website).  It involves spinach, feta cheese, diced tomatoes, olives sliced, drizzled with olive oil, oregano, s&p. mix and enjoy.
